  • 2 eggs
  • ⅓ cup fat-free milk
  • ½ teaspoon vanilla (optional)
  • ⅛ teaspoon salt (optional)
  • 1 tablespoon canola oil
  • 4 slices whole-wheat bread

Preparation

Beat together eggs, milk, vanilla, and salt in a shallow bowl.

Heat oil in a skillet over medium heat.

Dunk each slice of bread in egg mixture.

Place bread in pan and cook until golden, about 2 minutes per side.

Transfer to serving plate and sprinkle with powdered sugar and cinnamon, if desired.
