Ingredients

  • 1 cup smooth peanut butter
  • ½ cup honey
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups quick oats
  • 2 ½ cups crisped rice cereal
  • ¼ cup mini chocolate chips
  • Cooking spray

Preparation

1
Combine peanut butter, honey, salt and cinnamon in a small pot.
2
Cook on low heat and stir with a spoon until combined and smooth, remove from the heat and let cool slightly.
3
In a large mixing bowl, combine oats and crisped rice cereal.
4
Add peanut butter mixture into the bowl with the dry cereal and mix until well combined.
5
Spray a 9 x 13” dish with cooking spray and pour the mixture in it.
6
Press the mixture evenly across the entire pan and use your hands or a spatula to press it down tightly. Tip: Try using a parchment paper sheet over the top to press the mixture down without getting your fingers sticky.
7
Sprinkle the chocolate chips over the top and press down lightly.
8
Cover with plastic wrap or foil and refrigerate for three hours or until firm.
9
Cut into 32 bars, and store in the refrigerator for a quick snack that lasts all week.
Recipe Tips

Do not give honey to a child under one year of age. To make allergen friendly, swap out the ingredients to fit your family’s needs. For example, use gluten-free crisped rice cereal and gluten-free oats to make gluten-free. Replace peanut butter with your favorite nut butter, such as almond butter, to make it peanut-free.
