This hearty, homemade bread will please the whole family and make your kitchen smell amazing! Applesauce adds the perfect sweetness and moist texture. A touch of cinnamon ties it all together.

How to Make It

Ingredients

  • 1 ½ cups flour, sifted
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup vegetable oil
  • ½ cup applesauce, unsweetened
  • 2 eggs
  • 1 cup sugar
  • 1 cup grated carrots (about 3 medium)
  • ½ cups pecans or walnuts, chopped (optional)

Preparation

Preheat oven to 350 degrees.

Combine flour, baking soda, baking powder, cinnamon, and salt in a large bowl.

Combine oil, applesauce, eggs, and sugar in a medium bowl.

Add wet ingredients to flour mixture and mix just until combined.

Gently stir in carrots and pecans.

Pour into a greased 9x5x3-inch loaf pan and bake for 50-60 minutes.

Remove from oven and let cool for 5 minutes before removing from the pan.
Recipe Tips

Leave out nuts if serving to young children because of the choking risk. To make allergen friendly, swap out the ingredients to fit your family’s needs. For example, leave out nuts to make nut-free. For an egg-free option, replace each egg with 3 tablespoons of liquid from canned garbanzo beans for a total of 6 tablespoons.
