How to Make
Ingredients
1 ½ cups flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
¼ cup vegetable oil
½ cup applesauce, unsweetened
2 eggs
1 cup sugar
1 cup grated carrots (about 3 medium)
½ cups pecans or walnuts, chopped (optional)
Preparation
- Preheat oven to 350 degrees.
- Combine flour, baking soda, baking powder, cinnamon, and salt in a large bowl.
- Combine oil, applesauce, eggs, and sugar in a medium bowl.
- Add wet ingredients to flour mixture and mix just until combined.
- Gently stir in carrots and pecans.
- Pour into a greased 9x5x3-inch loaf pan and bake for 50-60 minutes.
- Remove from oven and let cool for 5 minutes before removing from the pan.
