Pesto is a popular Italian spread that combines nuts, parmesan cheese, garlic and fresh basil. Pesto pairs well with many recipes. Make a double batch to try with pasta, sandwiches, pizza, roasted veggies or other meals throughout the week.

How to Make It

Ingredients

  • ¼ cup walnut halves or pieces
  • 2 cloves garlic, peeled
  • ¼ cup grated parmesan cheese
  • ¼ teaspoon salt
  • 1 cup packed fresh basil leaves, stems removed
  • ⅓ cup olive oil

Preparation

Add walnuts, garlic, parmesan and salt to a food processor or small blender. Pulse or grind into a thick paste.

Add basil and olive oil, and blend 30 seconds or until just combined. Scrape sides of food processor or blender as needed.
Recipe Tips

For a nut-free version of pesto, replace walnuts with ¼ cup roasted sunflower kernels.

You can make pesto using a variety of fresh herbs or greens! Try parsley, cilantro, mint, radish or carrot greens for a flavorful twist.

If you make a large batch, you can freeze and enjoy vibrant pesto flavors again later. Cover and freeze portions in an ice cube tray. Once the cubes are frozen, pop them out and store in a freezer bag for up to three months.
