How to Make It

Ingredients

  • 1 medium fresh zucchini or 1 cup chopped, frozen
  • 1 cup frozen green peas
  • 1 packed cup fresh baby spinach
  • 1 teaspoon fresh mint (optional)

Preparation

1
Thoroughly wash all fresh produce.
2
If using fresh zucchini, trim ends and chop into small pieces (about 1 cup). For frozen zucchini, measure 1 cup.
3
In a medium-sized saucepan, add zucchini and about ½ inch of water. Bring to a boil over medium-high heat.
4
Reduce heat to low and cover with lid. Simmer for about 5 minutes. Add more water if needed.
5
Add peas, stir to combine and cover. Simmer for another 3-5 minutes, until fork-tender.
6
If using mint, separate leaves from stem while vegetables cook and set aside.
7
Once zucchini and peas are tender, remove from heat. Using a slotted spoon, carefully remove vegetables from the pot and add to a blender. Reserve cooking water in pan if needed for thinning.
8
Add spinach and 3 tablespoons of breastmilk, formula or reserved cooking water to the blender. Add in mint, if desired.
9
Blend until smooth and creamy, until all chunks and lumps are gone. If needed, add additional breastmilk, formula or water one tablespoon at a time to reach desired consistency.
10
Allow to cool before serving. Yields approximately 12 ounces.
Storage Guidelines
11
Separate a small amount for your baby to eat and save the rest in the fridge or freezer. For food safety, do not save any leftovers from the portion you serve your baby.
12
Refrigerator: Store in fridge for up to 3 days.
13
Freezer: Cover and freeze portions in an ice cube tray. Once the cubes are frozen, pop them out and store in a freezer bag for up to 3 months.
Recipe Tips

Frozen spinach also works well for this recipe! If using frozen, use only half the amount listed in the recipe.
