Ingredients

  • 1 tablespoon vegetable oil
  • 2 medium potatoes, cubed
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 4 eggs
  • ½ cup cheddar or jack cheese, grated
  • Salt and pepper to taste
  • 4 corn tortillas

Preparation

Heat oil in a skillet.
