How to Make It

Ingredients

  • 2 cups flour
  • 1 ¼ cups old-fashioned rolled oats
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • 1 cup unsalted butter, melted
  • ¼ cup granulated sugar
  • ¾ cup packed brown sugar
  • ¾ cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup semi-sweet chocolate chips

Preparation

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

In a medium-sized bowl, combine flour, oats, baking soda, cinnamon, pumpkin pie spice and salt.

In a large bowl, mix melted butter, granulated sugar, brown sugar and pumpkin puree. Add egg and vanilla, and blend well.

Gradually add dry ingredients to wet ingredients. Stir until well combined.

Fold in chocolate chips.

Drop 1 ½ tablespoon-sized scoops of batter onto a prepared baking sheet, about 2 inches apart.

Bake for 12-14 minutes or until edges are lightly browned.

Remove from oven and allow to cool for five minutes. Transfer to a wire rack to cool completely.

This recipe is versatile — add your favorite mix-ins for a fun twist. Try white chocolate chips, chopped nuts or dried fruit like raisins or cranberries. 

Want to skip the chocolate? Try a simple, lemon-yogurt spiced glaze to add bright, tangy flavor. Mix ½ cup plain nonfat Greek yogurt, ¼ cup powdered sugar, 1 ½ teaspoons milk, 1 ½ teaspoons lemon juice and ¼ teaspoon cinnamon. Thin with additional milk or water if needed, then drizzle on top of cookies and allow to dry before enjoying!
