How to Make

Ingredients

2½ pounds sweet potatoes (4-5 medium), peeled and cut into 2-inch chunks
2 medium red onions, quartered
2 tablespoons olive oil
Salt and Pepper to taste

Preparation

  1. Preheat oven to 400 degrees.
  2. Place sweet potatoes and onions into a 9 x 13 inch baking dish; coat sweet potatoes and onions with olive oil and salt and pepper to taste.
  3. Bake for 25-30 minutes until sweet potatoes are fork tender.
