  • 2½ pounds sweet potatoes (4-5 medium), peeled and cut into 2-inch chunks
  • 2 medium red onions, quartered
  • 2 tablespoons olive oil
  • Salt and Pepper to taste

Place sweet potatoes and onions into a 9 x 13 inch baking dish; coat sweet potatoes and onions with olive oil and salt and pepper to taste.
