How to Make It

Ingredients

  • 1 pound (16 ounces) ground beef, lamb or pork
  • 2 large eggs, lightly beaten
  • ⅔ cup plain breadcrumbs
  • ½ medium red onion, finely diced (about 1 cup)
  • 1 teaspoon ground cumin
  • 2 teaspoons dried parsley

Preparation

Preheat oven to 400 degrees. Coat a baking sheet with nonstick cooking spray.

In a large mixing bowl, add all ingredients. Mix thoroughly with your hands or a fork until ingredients are well combined.

Using wet hands, roll meatball mixture into 18 medium-sized (2-inch) meatballs and place on baking sheet. Leave space around each meatball for even cooking.

Bake 18-20 minutes until browned or until meat thermometer reads 160 degrees.

Remove from oven, let cool and serve!
Recipe Tips

For a different variation, use ground turkey or chicken. Or try with fresh herbs like dill, mint, cilantro or parsley. Pair with tomato-based sauces like marinara or yogurt-based dips like tzatziki.

This recipe is a great way to use up extra baby foods! Simply use infant cereal instead of breadcrumbs and 4 oz. vegetable puree in place of eggs (carrot or sweet potato purees work well).
