Ingredients

  • One 12- to 14-ounce package fully cooked sausage, cut into ½-inch slices
  • 1 pound (16 ounces) brussels sprouts, halved
  • 1 red bell pepper, chopped into 1-inch chunks
  • ½ medium red onion, chopped into 1-inch chunks
  • 2 medium carrots, cut into ½-inch slices
  • 1 medium parsnip, cut into ½-inch slices
  • 3 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.

Combine sausage and vegetables in a large bowl.
