- 1 tablespoon vegetable oil
- ½ cup onion, chopped
- 1 cup green pepper, chopped
- 2 cups corn
- 2 cups diced tomatoes or 1 can (15 ounce) diced tomatoes
- ¼ teaspoon oregano
- Salt and pepper to taste
